Although weather outside is not ideal, BBQ season is upon us. Memorial Day being just a few weeks away people are planning BBQ's and parties its important to know what you are doing with the grill. I wanna discuss today a simple recipe for making skirt steak on the grill. For those not so experienced its a good piece of meat to feature at a party. It easy,tasty and most people appreciate the change from just burgers and hot dogs. 


Skirt Steak (grill)

Ingredients

Skirt steaks (Choice and Peeled 3lb.Package)

Sea Salt - 1 Tablespoon

Pepper-   1 Tablespoon

Garlic (granulated)- 1/2 Tablespoon

Olive Oil- (not extra-virgin) 1/2 cup


-Take Skirts out of package and lay on cutting board. Trim excess fat. Should not be  too much on there. If there is some skin and thin layer of fat peel of top but don't take off too much because it will help with flavor.


-Cut pieces into portions about 5 inches wide it will make steaks easier to handle and maneuver on the grill.


-In bowl mix Salt, Pepper, Garlic, and Olive Oil. Mix well as to look like a marinade.


-Throw Steaks into bowl and mix them around and coat evenly with the marinade mixture.


-If cooking right away after preparing makes sure to let steaks come to room temperature before grilling. NEVER put cold steaks on grill as they will burn much faster on outside and take much longer to cook on the inside.


-Get BBQ nice and hot. Take your room temperature steaks and lay on grill. Close grill but don't go to far because they will cook quickly. If gas grill, lower heat to med-high.


-Check steaks after 2-3 minutes. Open grill and check meat. Flip steaks and cook for 2-3 more minutes on other side. Cooking times may vary based on grills. Use a meat thermometer and make sure meat is about 145-160 degrees depending on taste.


-When steaks are done take off grill and put on plate don't cover let steaks sit for a few minutes before serving. Not too long though as since they are not that thick they will cool faster.


-I am not a big fan of crazy sauces on beef but you could add BBQ sauce or anything else after cooking. I don't recommend before especially with beef because the sauce can really alter taste of beef and you will just be tasting the sauce.


Rainy Day Skirts


-If weather is bad and BBQ is not an option, don't worry not all hope is lost, they could be made in oven as well.


-Follow same preparation steps as above. Instead of grill, heat oven to 450 degrees WITH roasting pan in oven.


-Sprinkle some more Olive Oil in pan and place steaks in pan. Set oven timer for 8 minutes and flip steaks when time is up. Cook 6 more minutes on other side. Heating times may vary so make sure steaks reach temperature of 145-160 degrees depending on taste.
